Champagne

is a sparkling grape wine saturated with carbon dioxide as a result of secondary fermentation of specially prepared and processed wine material in hermetically sealed bottles or tanks. The high content of carbonic acid in champagne causes frothing of wine and its game at opening of a bottle.

The name Champagne was obtained from the province of Champagne (France), where it was first prepared in the mid-17th century, and the process of saturation of wine with carbon dioxide by secondary fermentation was called champagnation. According to French legislation champagne is called a sparkling wine, obtained only in Champagne and only in a bottle method (sparkling wines of other wine-growing regions of France are called mousseaux).

Only sparkling wine produced in France, in Champagne, has the right to wear a patented name – “Champagne”. According to the Treaty of Versailles, this term is approved solely for reasons of classification of wine as such, and only then, the National Institute of Original Names – registered champagne as a trademark protected by law. For example in Italy sparkling wine sounds like – “spumante”, in Spain – “Cava”, and in Germany – “Sekt”. Russia in this regard, took the path of least resistance. This is either the use of the term as a secondary name, the type of “Russian golden” semi-dry champagne, or by adding a participial turnover – “Soviet champagne.” However, real champagne is produced only in Champagne!

One of the most severe hangover syndromes is given by champagne. In this respect, sparkling wines overtake most strong drinks. The fault is the sparkling wine, in other words, the huge content of carbon dioxide. This explains one interesting fact. After all, the main taste of champagne is due to his “game”. But it just gives champagne negative qualities. One of them is the ability to cause a severe hangover.
